I made home made calzones last night. First time I ever tried the method.

The dough turned out super good! I'd use the recipe again! I stuffed with tomato sauce, green peppers, pepperoni and mozzarella...then I topped with oregano and parmesan on top.

Baked at 375'....they turned out pretty good...but I would recommend a higher temperature next time...maybe 425'.

Next time I'd like to try Ham and Pineapple....or maybe even sundried tomato and kalamata Olives.

425 is the correct temperature... Try mixing some ricotta in , ust whip it really well until it is nice and smooth. Also brush the dough with a little egg wash. It gives it a nice color....

BTW, stay away from the ham and pineapple crap... Unfortunately you Canadians love that shit...

Ricotta is under used, people don't know it's what makes a lot of those dishes pop.
The right cheese like that makes the dish.
Lasagna is suppose to have it, it's a shame nobody uses it much anymore like it used to be.

I used to know a lot of people who liked it, like I mentioned before though, you need the right sauce with it, and most pizza makers do not use the right sauce.
A slightly tangy sauce, not a lot of spices works, those New York style pizzas sauces don't work for it.
Forget the Pizza Hut garbage also.

I still remember when Pizza Hut used to be good. A lot of things went to shit during the 1990's...

When I got my drivers license at 16 in the 1990's, I worked at a pizza place for a year (mainly delivering, but I was paid hourly and expected to help out in the kitchen as well). In that year alone they managed to turn a great product into shit.

Not only did they start to cheap out on ingredients (we used to prepare a lot of things in-house, but that changed to getting frozen shit delivered), to getting new ovens that could cook faster, but the crust was now shit too.

Went from a product that I enjoyed, to one that I simply wouldn't eat anymore. These companies never fucking learn: If you have a successful product that the public likes, leave things alone.

I think a lot of the issue now is ingredients, it's all garbage, and people should not even be eating the stuff.
You have either soy, or Canola in everything, even the beef is full of plant fiber, or as I call it saw dust.
The flower isn't good either, it's usually full of soy, or other things not good for you.
Then there is the milk, and cheese, all the good stuff is stripped out of it, it's pasteurized to death also, and diluted.
