Elendil and Gil-galad were both killed by Sauron at the Siege of Barad-dur. So they didn't defeat Sauron. It was Isildur who cut the ring from Sauron's hand basically by dumb luck, thus destroying Sauron's physical form. And as we know, Isildur didn't have the foresight or the fortitude to finish the job by destroying the one ring.
