I had to bake today, it’s just a day for baking. And all I had at home was walnuts so I didn’t make asal’s cake, I made a cake per an old recipe my mom’s colleague once shared. A pre-internet recipe:)

4 eggs
250g sugar
250g butter
250g flour
250g ground walnuts
2tsp baking powder

Bake 185C for 20min

Once baked and cool, cut the cake in half, add a thin layer of apricot jam then put two halves back together.

The cake is cooling. I hope I manage to cut it properly. If that proves challenging, I may slice it in half, add jam onto one half and stack the other on top.

That looks nice. I made the cake with cashew flour and it was fine. I'm sure walnuts would work.

It did turn out ok but it does have a lot of protein (eggs) so it is a lot like sponge cake with butter and walnuts. Apricot jam layer definitely lifts it up but what would be better is mixing in 3 tbsp of apricot jam right into the batter, it would make the cake moister. Worth a try next time, cept to make it tastier for kids I’d have to add a tbsp of cocoa powder - that would make it taste like a brownie.

Gmorning!

Got bad news from a friend from the old country. A lot of young ppl with pulmonary fibrosis as a result of covid. The majority of those with fibrosis had only mild symptoms and didn’t seek out treatment or they had covid early on when doctors didn’t know how best to treat it. Severe fatigue persists for months after the infection, so much so that ppl can’t go back to work for months.

Love this guy. =) Have been subscribed to him for almost 4 years. He's probably more fun to WATCH cook, than to be a follower of his recipes.
Having said that...love his version of lasagna. Very similar to how I make it...with bechamel...and I also leave out the spinach. :D
I'd rather have a fresh spinach salad on the side. =) That looked quite yummy.
